                 ~Taco Meat~

4 C. almonds
3-4 med to lg. carrots
6 C. sun-dried tomatoes (soaked for 2-overnight)
1/4cupTamari
1 clove garlic
4 Tbs. fresh oregano or 2Tbs.dried oregano
1 tsp. chili
3 Tbs. Cumin
1 Tbs. apple cider vinegar
1-2 Tbs. agave nectar
1/2-1 Tbs. cayenne pepper
2 to3 cups of soaking water from sun-dried tomatoes

Directions
1. Soak Almonds for 8-12hours. Rinse well.
2.Take almonds and put through food processor until pulverized into medium small pieces and Place in bowl.
3.Take carrots and put through food processor
until pulverized into medium - small pieces.
4.Place in same bowl with almonds and set aside.
5.Combine all other ingredients except soaking water
in food processor and process slowly, add the 2-3 cups
of soaking water until a medium thickness.
6.Add to carrot and almond mixture. Mix well.
7.(Optional) Chop 1/4 red onion and 1/2 red pepper by hand, add to mixture and  mix well.
8.Chill and serve. Serves 8 - 10, Freezes well if you want to divide taco meat.

               ~Granola Cookie ~



1 C. almonds, chopped fine
1 C. pecans, chopped fine
¼ C. dried shredded coconut (unsweetened & un-preserved)
½ C. dates, pitted and soaked in water for about 2 hours
½ C. sulfite-free raisins, soaked in water for about 2 hours
2 T. raw almond butter
½ tsp. alcohol-free organic vanilla
1 tsp. cinnamon
1 tsp. nutmeg
Dash of sea salt 

Place nuts in food processor and process until sm-med chunks. Place in bowl with coconut. Drain dates and raisins (I keep about ¼ cup of the soaking water) in food processor add the rest of ingredients, blend until smooth and creamy. (if needed, you can add some of the soaking water if too dry) Combine with nuts and coconut and stir by hand until well mixed.
Shape mixture into cookies and place on dehydrator mesh screen. Dehydrate at 105 for 16 hours. Makes 20-30 cookies.

            ~Candied Pecans~
 
1 c raw pecans
1 t ground cinnamon
1 pinch sea salt & cayenne pepper
1/4 t vanilla extract (or vanilla bean)
1/2 T sesame seeds
2 T shredded coconut (unsweetened)
1/2 t fresh orange juice
1 T pine nuts
3 T pure maple syrup* (or agave)
 
Place all ingredients in a bowl and mix by hand to coat evenly. Pour mixture onto teflex sheet. Separate nuts into small clumps and dehydrate at 110-115F until liquid begins to firm. THAI
NOODLES
 
                                                               1 1/2  cups raw cashew (soaked for 2-3hours or overnight)
2 cups coconut water (from a young Thai coconut)
1 cup shredded raw organic coconut
1 TBSP red curry paste
1/8 tsp.(or to taste) fresh organic grated ginger
1/2 organic red pepper
1 carton (4oz.) baby corn
1 organic celery stalk
4 or 5 organic zucchini
1 or 2 organic green onion
 
 
Rinse cashews really good under water. Place in a high powered  blender, add the next 4 ingredients and blend till your desire thickness. Dice the red pepper and celery and place in separate bowl. Snap the baby corns in half and place in with the other vegetables. Take a spiral cutter, or just a peeler to make your noodles. Place  noodles on plate. Pour sauce in with the vegetables and mix well. pour over noodles and sprinkle some chopped green onion and serve.            (Serves 4)
